My choice is PwnageTool for Mac. The way it works is simple: You get the latest firmware (2.0.2 (5C1), and load it into PwnageTool. It has a nice UI to help guide you and make it an easy process. If you aren't familiar with advance stuffs, just keep PwnageTool in easy mode, not expert.
Yopu'll go through the steps, and it will create your custom IPSW. It will then tell you to put your device into DFU mode, and it will guide you on how to do so. Then, through iTunes, restore with your custom firmware, and there you are. Jailbroken iPod touch 8GB.
iPoco, QuickPwn does NOT require the iPod to be previously jailbroken. There would no use for QuickPwn at that point. Whoever told you that is wrong. You need to be on 2.0.2 unjailbroken. You will load the 2.0.2 firmware into QuickPwn, and it will create a ramdisk which contains all the patches which it then uploads to the device (during which you will actually see the pwnapple logo on the iPod touch). When al is said and done, your device will be jailbroken with Installer and Cydia.
I hope that clears things up. Also, if you get ANY errors with iTunes, make sure your device is in DFU mode. This is where the PwnageTool and QuickPwn methods lie with an exploit found in DFU and iBoot.
