So I have the machine listed in my sig... what would I need to convert it to a full fledged legit Mac Pro? Could I just buy a MacPro case, Logic board, and a Xeon chip?
Could I run a non-patched Leopard on this, and still use ninject for a non-Mac video card?
I'd like to go legit with my system... but not enough to buy a $2700 Mac Pro from the Mac store!

You would need,
Mac pro case, PSU, logic board, Xeon(s) ram riser cards and FBDIMMS and a graphics card.
About the only carry overs would be the Hard drives (if they are SATA) and the optical drives.

Wow... lol... maybe I'll just do a case mod instead 
considering that a mac pro logic pro oem goes for $500-800 itself doesn't make things better.
You also have to consider if you want a penryn based xeon, the 2.8ghz 1600mhz fsb aren't even on your normal retailers like newegg or zipzoomfly. The closest thing you can get is a 3 ghz xeon with a 1600 mhz fsb for $1000.
A 1333mhz fsb isn't a bad solution, if you were even somehow able to overclock it it would be a nice performer. I think the performance gap between penryn 1333 and 1600 is a good bit stock, but nothing to go crazy about. That would allow you to get a cheaper set of xeons and overclock.
My recommendation, either do one of two things
1. buy a mac pro, it would be cheaper anyway
2. get a intel 5400 based xeon board, build a good hackintosh and overclock
