This is a puzzling question for me. It is to my understanding that the PS3 uses a powerpc Cell processor, and it has an "Open Other OS" capabilty, so all we would need would be the bootloader? Would it be possible to run OS X on ps3?

First of all, the processor isn't compatible. Belonging to the IBM Power Architecture family does not make it a PowerPC processor that is compatible with OS X. Even if it was PowerPC OSX would still have to be created with the ability to work with it.
Second of all...nothing else is compatible either to my knowledge. Aside from basic things like the hard drive and memory, that is.

The Cell is not much a PPC cpu. The Cell doesn't even have real cores. It's only branded as PPC.
