A logo is more than a sign or image at the top of the page, it's something that people remember your site by, something universal about that site that everyone can "relate" to. If we held a logo competition for the current site to change the current logo, there is no question that half the entries would be better than the one we have now. In essence, I agree with what you're saying; if you take away the apple logo from apple, they lose the most instantly recognizable graphic element of their brand. Where I'd like to differentiate is that Insanely Mac doesn't have a unique logo or logotype. The command symbol currently being used doesn't say "Insanely Mac" when I see it. It just says "apple", or more specifically: an apple keyboard.
Anyway, the point I'm trying to get at is that Insanely Mac doesn't have a logo or brand to worry about taking away, so as long as it says "Insanely Mac", it would still represent the site. If in the future someone does design a unique graphic that represents this site, then you would simply need to include that in any future designs to provide consistency.
