Yeah I forgot to mention that this might not even be considered an issue for most people but to me it is extremely drawn out. Especially since I have to do it so frequently and if it could be simplified into a single Terminal command or at the least, a single disk image instead of needing to create a sparse and then a dmg afterwards. Thanks for the suggestions though. I've considered a script and Automator both for at least making the process smoother but the purpose of the thread is to see if anyone else has a cleaner, more updated method and not so much to automate my own.
That's actually the thing. I can't simply uncheck anything. The annoying files are the ones that OS X auto generates on it's own usually. Such as .fseventsd and .Trashes mostly. Deleting them from Terminal works great but once the image is remounted, they usually respawn. They aren't a huge deal though, like I said I know how to deal with them. Maybe I should remove that part from the post. Anyway, thanks for the suggestions again, I always appreciate any and all assistance I can get.

Let me start by apologizing for replying to this so very late. I hate replying to such an old thread and reopening it like this (forgive me mods) but there is a reason for it. The truth is I spent somewhere close to a full 2 weeks doing nothing but working on this project. It basically consumed my life during that time and eventually I got completely burnt out and wanted nothing more to do with it. So I put the whole thing on the back burner until I could find time again to hopefully finish it.
That's exactly what I plan to do now. I've started everything up again and plan to make a live disc for Tiger (hopefully), Leopard and Snow Leopard. I would like to make a couple for Lion and Mountain Lion too but I only have a 1st gen MacBook (x86 CPU ONLY) to do testing with so those will probably have to wait awhile. It isn't a big deal though considering the method to create live discs for Lion and ML should be EXTREMELY easy.
Anyway, I understand it likely doesn't mean a thing now since so much time has gone by, but I wanted to apologize for not replying to the thread and keeping it updated like I wanted to. I also want to thank everyone who helped me or tried offering up their advise for my project. I do very much appreciate it. Oh and of course, i'll keep the thread updated on any and all progress this time, assuming I don't catch hell from the mods for replying to this old thread. ;p

You could always donate it to me. I'm in need of an OS 9 guinea pig after all. ;p
And yeah they're right. As an OS X machine it would be...painful to say the least.

I'm an idiot. Out of habit, I formatted my USB HDD as MBR for the ML install which it refuses to use. After reformatting it to GUID and testing again everything worked as it should and within a few minutes, the installer screen popped up. Maybe my honest mistake will help someone else. ;-p

Anyone else experience this or have a solution to fix it?

I am currently backing up important data before I go through with the upgrade. After everything is safe I will continue with the ML install and will update this page with progress and assuming all goes well, I will again provide a zip archive with my required files for ease of use to other users. See ya soon...
UPDATE: First post is updated again with all the required stuff for running Mountain Lion! Since it is such a "minor" update, most of the files are the same ones used for Lion. The exception is FakeSMC, which was updated.
