I've never had this exact problem, but I've heard that hfs explorer works well http://www.catacombae.org/hfsx.html
Use that, and then any burning utility to burn to disk. You could also try windows 7 usb dvd download tool (google it) I've got it to work with Linux, so it might be worth a shot.
I'll try both these methods tomorow.

Mount your DMG to a USB, or burn it to a DVD, put that in your MacBook and reboot holding option, it should ask you which volume you want to boot from, select the install disk, either USB or optical. It should install Mac just fine.

another issue, very few servers have pcie slots, would it be any different to use a pcix graphics card, will mountain lion recognise it, or is there a patch i can use?

Thanks for the quick reply,
I'll get a server then, looking like it will be a dell powerEdge 1850,
I'll try mountain lion first

I have a MacBook pro running lion, it just isn't coping very well with everything I throw at it,

Also does anyone know If chipsets could be an issue?

Also are there any other things with it being a server rather than a standard desktop that could cause problems?
