Hi,
I know nothing about EFI or the new Macs, but I had a thought.
I assume the new Macs can boot off USB? If they can, what about putting a small bootloader-type program on a USB flashdisk?
Could that in turn boot XP?

Nope.
It's a good idea, except for the fact that all you are doing is getting XP to be told to start.
That's not the problem. The problem is in getting it to keep running without giving a BSOD
