How many Task Manager Items should I see? Three?

In 32 bit Vista I see two for me as a user and one more SYSTEM process if I select "show processes from all users"...

That is correct, although the second system process should be running under the user account (it will if you restart the service after logging in). It needs to be this way because in Vista a service is unable to interact with the desktop:

 

So the different processes:

* Service running in noninteractive session 0

* Desktop interaction (eject key, num lock and other stuff) running in user session

* Tray icon running in user session. This process is optional and can be exited and everything still works.
