Updating macOS version in VMware?

Hello I wondered if I could get some advice. I hope this is the right place to ask.

The short version of my question is this:

I am currently operating OSX Yosemite on VMware on my Windows 10 PC and Im wondering what is the best way to upgrade to the latest OSX so that I can access the most current Xcode.

Can I simply update OS Yosemite from inside the OS, ie: Apple menu > Software update.. Would this actually work, or is it likely to create problems?

Or would I be better off finding an image of the latest OSX Sierra and simply use that?

The longer version of what I am actually trying to achieve is this:

I'm developing a game for iOS and I have reached a point where I need to have access to the latest Xcode in order to test in-app purchases and Game Centre achievements.

Up to this point I have been using my virtual installation of mac OS to upload builds of my game to iTunesConnect using Application Loader. Then Ive been testing with TestFlight. Its all been working very well to this point, but Ive learned that to test iAPs and Game Center, I need to set up what Apple calls a Sandbox testing environment and I need to enable my Apple test device to be a 'development device'... In order to make my device a 'development device' I have to plug it into my system with Xcode running. So I can't install the latest Xcode on OS Yosemite... therefore I need to update OS Sierra.

Sorry for the lengthy post and thanks for any advice.
