Where should I be posting a build log of my dual-socket xeon x5650?

Seem like you route is a correct way. Sometime i ran out space on drive and got like 30 gb for partition, it still run.

Vga is not support in mac, i don't know how about the radeon 7970, but you could try

AitConfig=Tahiti AtiPorts=4 cpus=1

the flag and some other flags to make it boot.

Seems to have everything working, I just had to make sure I checked the graphic enabler=yes BEFORE installing onto my ssd, for some reason if I did this after it would detect my video card as a 3MB unnamed verse the 7xxx series 3gb it should be named.

I had to run kextutility to make it so I could edit the info file inside of my ionetworking, I actually spent hours trying to do this manually before finding this program that did it in about a minute, suppose I learned a few things tho.

after that I had to reset. if I didn't reset and tried to install anything else past this point without resetting it would freeze on startup. (learned that the hard way)

after resetting I then used ##### to install the lan drivers.

I restarted again for safty.

I then did mac updates and restarted again.

This is how far I have got.

So far everything seems to be working ~more or less~ and I was able to run cinebench and get a score roughly around what other people get with this cpu and gpu, so it seems to be using them both fully.

I do have a PROBLEM however:
I'd like to know my cpu temps and control my two fans.
I tried installing smcfancontrol like I use on my macbook, however it seems to not work, it will go to load then just close itself without any message.
I *Think* this has something to do with needing to install some kind of sensor driver in mac, since I assume it just doesn't know what sensors are there or what drivers to use with them, much like my lan, its natively supported yet I still had to edit ionetworking to let the mac know to use the right driver for it...

Is there a program that can detect what hardware I'm using and what drivers I'm using so it can either let me know what ones I need to update or can update them for me? Since I'm not really sure what all from my board has actually been enabled and what has not.
