Dual booting windows 8.1

I just built a PC, and I wanted to dual boot OS X Mavericks (and Yosemite when it's publicly available) and Windows 8.1, I have a 240 GB Intel 730 Series SSD which I want to have 120 GB allocated to each operating system, and I have a 2 TB WD Black HDD which I want 1 TB each to be allocated for file storage. I know that each OS uses a different type of formatting but is it possible to access the data in the 1 TB partitions with both operating systems?

 

My other hardware is a GTX 780Ti, an Asus Maximus VII Formula, and an Intel i7 4790k processor. 

 

I'm a little overwhelmed and new to this whole Hackintosh thing, so could someone point me in the right direction?
