High-end workstation. Sandy Bridge? Advice please!

Hi. I work at a video post-production facility, as a colorist and digital image tech.

 

I own a hackintosh with a P5W DH Deluxe and a Q6600 processor, which still runs quite well but is getting old. When I initially bought this computer I was in a rush because my eMac had died and I needed to go on with a project. I was very lucky to have chosen that mobo, as I still find support for it in the forums and it works well.

 

I want to build a new hackintosh with the best components to replace this one, but this time I am taking the time to investigate which components should I get, hoping I get ones that last with support as much as my P5W.

 

Basically we use 2008 Mac Pros (Xeon) and one 2009 i7 Hackintosh which is in a really bad state (clearly the guy who built it didn't take the necessary time). I want to get something better than those.

 

I'm thinking on a Sandy Bridge processor, which mobos are running OK with that? Anything special I should take into account? Are i7 Sandy Bridge better than Nehalem ones?

I need at least 4 PCI-E slots, 2 for graphics card, one for video card and one for a RED Rocket card.

 

I have a GTX480 and plan on getting another one so I get a dual-480 setup. Does anyone know if a 580+480 setup would work? Or should I stay with dual 480?
