boot .plist files from external drive

at my work we use all Macs running OS X, as it is a call center I frequently have to move computers on a day to day basis. What I want to do is configure my preferences on one computer and copy the user>Library>preferences folder to an external drive and when I log into another computer copy the folder with all of my .plist files so I don't have to go through and reset all my settings. I managed the first part easy enough, but it won't let my copy the folder onto the new one as the files are "in use".

 

Ideally I'd like to do everything automatically, and I could probably do it by mounting my external drive as /user/library/preferences but that would require root access in terminal wouldn't it? can I rename the preferences folder so I can copy my one in from my drive and restart the computer?
