I recently dual booted Vista and Leopard, and now I would like to uninstall Leopard so I can have some space back.

So would I:

Extend my Vista partition over my OSX86 partition, and then insert the Vista disk to repair the boot config?

do This

or something else?

Or if someone wants to direct me to a way to make your OSX partition smaller, then that would be great. Would I sue gparted?

If you don't already use EasyBCD, you should

Gparted should work fine for shrinking ( it just can't expand, yet ), just make sure to turn off journaling before doing it, then back on afterwards.

To completely get rid of any other OS use EasyBCD to restore the Vista bootloader if you're using something else, then boot into Vista and delete the partition.
