iPhone / iPod scripting

I have a jailbroken (winpwn 2.5-BETA) 16G iPod Touch, running 2.0.2 w/ Cydia and Installer 4.

I'm looking to write a script on the iPod launches Safari. I exec /Applications/Safari.app/Safari but nothing happens. If I run it from a shell (either from within Terminal on the pod or from an ssh login) it just prints "Killed" and aborts.

What is the proper way to launch applications which make use of the iPod GUI from a script? From a remote shell?

Is my problem related to my software version? I recall different behavior from my jailbroken 1.1.1 firmware.
