2 Graphics cards in an SLI mobo, but *NOT* in SLI

I have an SLI mobo - an Asus A8N-SLI Premium, to be exact. Currently I have a 7800gt in the PCI-E slot, which works great in Windows and OSx86.

 

However, I would like to game in Windows with a new GPU - the new Nvidia GTX 260.

 

Is it possible to install the 7800gt in one of my PCI-Express graphics slots, and the new GTX 260 in the other... but *NOT* for the sake of SLI, rather, for the sake of using one card (the 7800gt) in osx86 for compatibility, and then using the GTX 260 when I boot windows for gaming? Then I could just keep the case all closed up, and plug the monitor into the different graphic card whenever I switch between Mac/Windows?

 

Is this possible? If so, how? And, what are the drawbacks?
