Is it safe to remove the shortcut to my Windows drive from my OSX desktop?

I don't wanna mess anything up by deleting it.

It looks you are pretty new with OS X.
It's not a shortcut (Like in windows). But think of it in that way if you like.
You can eject (umount) the drive by moving it into the Trash (The trash will change to a eject symbol) or pressing command + E.
You can mount it again with Disk Utility if you like
You can also remove all drives from desktop on Finder Preferences, while keeping them mounted.

Yes, once you eject it you wont see it around in OS X, but the partition is there you didn't do anything to it.
