Since these work on Mac Pro's and have 10.5 drivers am I right in thinking they should work on a hackintosh build?

Knock on wood... I'm using one in my Hackintosh. Works well as an output (only tested Component) for FCS and After Effects. Haven't tried Color.
I have captured composite and looking for a S-Video (split cable, seperate Y & C RCA's).

Yes. It works. Test HDMI in and out, Component HD in and out. Everything works great with these 1x PCIe cards from Black Magic Design. I'm going to get the new SDI decklink when it hits the streets.
