Is it possible to install iTunes but just iTunes without quicktime and all that that it comes with? Any help appreciated.

iTunes requires Quicktime to be installed to run, so no. Why would it matter?! just delete the icon and pretend its not there.

you may be able to get by with an older version of iTunes and install "QuickTime Alternative"

ITunes needs QuickTime to decode songs and movies , so you can't have iTunes without quicktime
