As you know the last powermac g5 had a PCI-X slot. If I put a 8800GT in there and used the drivers nvidia gave would it work?

No, you need a specific Apple graphics card for the G5 that has the right ROM/firmware.

I can remember someone can use an EVGA 8800GT on a mac pro could that work on a powermac G5

The only way to even possibly get it to work would be to flash the ROM and pray.
